BENEOPRO W-TEX textured wheat protein provides texture very similar to that of meat and is therefore well-suited for complete or partial substitution of meat. One part textured wheat protein combined with two parts water replaces meat 1:1 and with a protein content of approx. 67 %, it is an excellent substitution to meat.
BENEOPRO W-TEX is very easy to work with. Unlike other textured protein sources such as pea protein and soy protein which can tend to have a bitter aftertaste, wheat protein has a completely neutral taste. It is therefore very easy to add flavour to the product and there is no need for taste masking off-flavours.
The textured wheat protein is very simple and fast to hydrate and can very easily be used in the production without any need to adjust the process. After hydration, BENEOPRO W-TEX is very stable keeping its’ texture. This makes it excellent for e.g. meaty, savoury vegetarian nuggets and patties. The perfect, complete taste is achieved by adding a good natural meat flavouring.
