Short-chain fructooligosaccharide provides a remarkable alternative solution for sugar reduction that not only delivers manufacturers with enhanced flexibility for sugar replacement, but also simultaneously enriches the product with healthy dietary fibres.
BENEO scL85 short-chain fructooligosaccharide (scFOS) is a dietary fibre enzymatically produced from beet sugar. It has a mild sweet taste, good solubility and natural credentials that can contribute to improved taste and texture. ScFOS is perfect for sugar reduction in cereal bars where it adds dietary fibres at the same time. This contributes to an improvement in the finished product’s nutritional profile, allowing for obtaining a better rating in front-of-pack nutrition labeling systems.
With BENEO scL85 it is possible to achieve a 30 % sugar reduction in cereal bars while still having a pleasant texture and taste. What’s more, the fibre content is increased which allows for labelling the cereal bar with a “high in fibre” claim* (*depending on local legislation). Another important advantage of formulating cereal bars with BENEO scFOS is that the cereal bars are softer at the beginning of the shelf-life and remain soft over time as they show less hardening.
