The Swiss company, UpGrain, rescues spent grains from the brewing process and converts them into protein- and fibre-rich ingredients for a variety of applications in the food industry.
With a clear commitment to reducing food waste and environmental impact, UpGrain uses innovative technology to produce ingredients with up to 90 % lower environmental impact compared to conventional alternatives such as soya or pea protein.
Upgrain’s unique mechanical separation and drying process preserves the full nutritional potential of barley, recovering all valuable components without enzymatic or chemical treatment. UpGrain offers two product variants that are particularly well-suited bread, extruded breakfast cereals and nutrition bars:
UpGrain Classic (barley malt spent grain)
With 21% protein and 57% fibre combined with a low carbohydrate content, UpGrain Classic is ideal for nutritional enhancements of bakery products and breakfast cereals, as well as for diet-conscious formulations. Together with healthy vitamins, minerals and antioxidants, it improves the nutritional profile while the mild flavour ensures minimal impact on taste and texture.
UpGrain Protein (barley protein)
Containing 45 % protein and 31% fibre, UpGrain Protein is also rich in vitamins, minerals and healthy antioxidants. The protein is denatured, which means it is no longer functional or soluble, making it particularly suitable for boosting nutritional value without altering texture. It offers a balanced amino acid profile and high bioavailability.
Together, the two UpGrain ingredients provide a cost-efficient solution for achieving a balanced nutritional composition in bread, breakfast cereals and nutrition bars.
