Where real fruit pieces have never been before
The new Mini’s, tiny real fruit pieces from Taura, open a new world of opportunities in bakery and confectionery
By Taura Natural Ingredients
Taura Natural Ingredients’ Mini’s are an innovative range of extremely small real fruit pieces developed to enable food manufacturers to add the benefits of real fruit to applications where it has not been possible before.
The demand for very small real fruit pieces is increasing across the world and can be attributed to health-conscious consumers seeking indulgent products with fewer calories so that they can enjoy snacking without feeling guilty about it.
Mini’s are as tiny as a grain of quinoa and are suitable for use in fine bakery and confectionery applications such as ultra-thin biscuits and premium thin chocolate tablets. Mini’s are also great as topping on donuts and muffins or as inclusions in desserts, adding flavour, aroma and a soft chewy texture.
Taura is targeting Mini’s to a range of sectors including bakery, dairy and confectionery. The small size and the consistency of the Mini’s pieces mean that they travel easily through production equipment such as depositor nozzles and rollers, offering exceptional distribution.
Mini’s are produced using the unique URC® process – Ultra Rapid Concentration – and have a high fruit content with no artificial colours or preserva tives, which means that they are perfect for clean label products. They are free-flowing and bake stable, so they will not burn, bleed or discolour during baking. Furthermore, they have a water activity of 0.35-0.50 to suit both dry and moist applications.
Raf Van Lommel, Sales & Marketing Manager at Taura Natural Ingredients comments on the new product launch: “We’ve seen a big demand among our customers for very small real fruit pieces that offer an alternative to ingredients that contain high levels of added sugar and other addi-tives, such as sprinkle-style products. Mini’s provide the perfect solution with each piece offering a tiny burst of flavour, aroma, colour and texture in a wide range of products. They look fantastic and are very easy to handle during dosing, providing more spots of fruit in the finished product than can be achieved with the same amount of larger fruit pieces”.
Mini’s are available in all flavours.
- Through rollers used to make ultra thin products
- Through nozzles to deposit fillings
- Through cluster equipment for greater dispersion
- Through drinking straws
- Sprinkles as a topping
