Chickpeas are excellent for hearty foods providing a great source of protein and dietary fibres
Like other legumes, chickpeas are among the best food sources of slowly-digested carbohydrates and resistant starch and Limagrain Céréales Ingrédients (LCI) has now introduced 'Westhove chickpea', a stabilised 100% chickpea flour using the patented Farigel process.
Chickpea is one of the basics of the Mediterranean diet and is well known for its healthy benefits, As with other pulses, chickpea is naturally rich in proteins, fibres, and minerals and low in fat. Yet, despite these benefits, chickpea is less used in food formulations, because it requires a long preparation time. Now, because of LCI’s patented Farigel process, this stabilised 100% chickpea flour can be used without the previous constraints. You can save time and energy as there is no need to soak, to grind or to cook.
Westhove chickpea is easy to use and incorporate into instant hummus, tortilla chips, breads, cakes, biscuits, extruded products, pancakes and almond filling.
As a gluten-free and allergen-free natural thickener, Westhove chickpea can substitute cereal flours or soya. It has a long shelf life of 12 months thanks to its enzymatic and microbial stability. Also there is no need to soak before use, giving a double benefit of time saved and totally reduced industrial effluent. And, of course, the traditional nutritional benefits of chickpea remain unchanged.
Limagrain also offers other hearty Farigel treated pulses such as faba beans, red beans and green lentils.
