Ice cream

Ice cream is a frozen, aerated emulsion in which fat globules are dispersed in a partially frozen continuous phase containing air bubbles, sugars, and stabilizers.

Most ice cream products consist of cream or other milk derivatives, sugar, condensated milk or milk powder, stabilizers, emulsifiers, and various flavourings, but there are others with little or no milk ingredients at all, viz. non dairy ice, sherbet, sorbet, and frozen yoghurt.
