Minced
Minced fish is processed from fish flesh which has been separated from skin and bone in a mechanical separator. Particle size is typically 3 - 8 mm. Mince can be produced from whole fish or from the residue left after filleting or other operations. Usually, fish flesh is pre-broken and passed on to a mixing step where other ingredients are added. Typical products produced from minced fish: fish fingers, fish burgers, fish sausages.
