Salad dressings

Salad dressings are o/w solutions (oil-in-water). Incorporation of an emulsifier, a gelling agent and/or a stabilizer makes it possible to obtain dressings with a very low content of fat. Herbs and spices and vegetables are generally an important part of the product.
