Soft gums
Soft gums are a group of products made of starch and other texturizing ingredients. The soft gums may be either deposited, which is the most common method of production, or they may be extruded. The products are often referred to as liquorice, no matter if they actually contain the ingredient “liquorice” or not.
The most valuable part of this group is the pastilles based on gum Arabic and bulk sweetener (sugar, polyol or fibre). The texture of these pastilles is controlled by the many different ingredients and the drying of the product. Another large group is “extruded liquorice (coloured) strings” often with a centre or layers of fondant.
These products can be made in sugar-free, no-sugar-added or sugar reduced versions.
